“Hand to Hand” workshop in Tufara.

The Workshop “Hand to hand” will be held on August 23 in the City of Tufara.

The Workshop aims to revive the customs of the ancient peasant civilization, rediscovering the craftsmanship in the preparation of homemade pasta, the so-called “ciufell,” a traditional folk dish, as well as canned foods (peeled tomatoes, tomato sauce).

The domestic preparation of pasta and canned food was a widespread custom in peasant civilization, rooted in rural tradition and relying on knowledge passed down from generation to generation.

The initiative also has the merit of drawing attention to the need to shorten the production chain in order to achieve a healthier product as well as economic savings. The activity will cover a type of short pasta called “cavatelli,” which is a specialty of the village: the so-called “c’catell.”

The activity is integrated into the joint project in order to highlight a typical local product and make it appreciated during the summer period of greatest influx in the two countries.

In the evening, there will also be the 52nd Spaghetti Festival where spaghetti with homemade tomato sauce will be served.
