Cooking class to cook the renowned scapolese ravioli
The beating heart of our region is its local products and typical dishes, the fruits of ancient, handed-down traditions.
With this activity, our guests will have the opportunity to immerse themselves in traditional cuisine and, with the‘help of the expert hands of local ladies, they will be able to try their hand at preparing a typical dish such as the Scapolese ravioli prepared with genuine ingredients and old recipes.
The scapolese raviolo, larger than simple ravioli, is a concentrate of flavor designed to salvage leftovers from the previous day. The result was a dish that is perhaps even better than those from which it draws its ingredients and that, to this day, is still enjoyed in much of the region.
Stuffing ingredients include dry sausage, ground beef and pork, bacon, ham, chard, potatoes, Parmesan cheese, scamorza cheese and egg.
To enrich the dish even more, tomato sauce and peeled tomatoes are prepared in a sauté of oil, onion, carrot and celery, further flavored with goat leg.
Over the years it has become so famous that it has its own dedicated festival, in Scapoli, on the last Sunday of carnival.

From the North: Adriatica A14 highway, follow direction to Rome, take A25 highway, exit towards Bussi/Popoli, follow direction to L’Aquila (A 24), continue on SS 17, cross Popoli, SS 652 towards Venafro, take SS 85 Venafrana, SS158 and SR627 towards Scapoli.
From the South: Adriatica A14 highway, follow direction Pescara, continue on A16 highway, follow direction Benevento, at Benevento continue on SS 88, exit at Campobasso, take SS 87 (strada statale Bifernina) towards Campobasso/Isernia, continue on SS 17, take SS 85 towards Venafro, take SS 85 Venafrana, SS158 and SR627 towards Scapoli.
