The cult of San Martino and the “new” wine
Autumn, new wine, chestnuts, new oil, the first fires lit. It is in this atmosphere that every year comes the festival dedicated to San Martino.
In many villages, festivals are held, people group together or organize food and wine tours. This is the case in Gildone, where the Pro Loco organizes“The Tour of San Martino” for the occasion.
A well-established recurrence, it is an opportunity to spend a cheerful evening, being able to stroll through the streets of the village and taste local wines and dishes.
The cult of San Martino is strongly linked to the customs of peasant tradition. On the occasion of the eve, families gather to eat together the typical dish: baccalà arracanat and pizza manc’ levt.
The baked baccalà arracanato is enriched with breadcrumbs, walnuts, raisins and spices, placed on a bed of potatoes and dressed with extra virgin olive oil. The manc’ levt pizza, on the other hand, is a yeast-free pizza greased in extra virgin olive oil in which anchovies are sautéed.
The initiative aims to make people rediscover tradition, being able to taste not only baccalà arràcanat and pizza mang lèvt but also other typical dishes such as lassata (wheat, corn and chickpea soup), pasta and beans, casciatelli and many others. All in the characteristic seven cellars carved out of stone and set up along the streets of the historic center. There is no shortage, of course, of folk songs and dances.
The event is also an opportunity for new and old generations to meet and rediscover and enhance ancient Molise traditions.
